Ingredients
Scale
1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup sweet chili sauce
1/4 cup soy sauce (low sodium preferred)
2 tablespoons honey or brown sugar
1 tablespoon rice vinegar
1 teaspoon grated fresh ginger
2 cloves garlic, minced
1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
Place the cut chicken pieces in a bowl. Toss them with olive oil, salt, and pepper. Spread the chicken in a single layer on the prepared baking sheet.
Bake the chicken for 15 minutes until it is mostly cooked through.
While the chicken bakes, prepare the glaze. In a small saucepan, combine the sweet chili sauce, soy sauce, honey (or brown sugar), rice vinegar, ginger, and garlic.
Bring the sauce mixture to a simmer over medium heat, stirring constantly.
Once simmering, whisk in the cornstarch slurry. Continue to cook for 1-2 minutes, stirring until the sauce thickens noticeably and becomes glossy. Remove from heat.
Remove the chicken from the oven. Pour half of the thickened glaze over the chicken pieces and toss gently to coat.
Return the coated chicken to the oven and bake for another 5-7 minutes, allowing the glaze to set and become sticky.
Remove the chicken from the oven. Toss the pieces with the remaining half of the fresh glaze just before serving.
Notes
For extra stickiness, you can briefly broil the chicken for the last 1-2 minutes, watching carefully to prevent burning.
Serve this chicken over rice or with steamed broccoli.
If using chicken wings, increase the initial baking time to 25 minutes before glazing.
