A recipe for rich, fudgy brownies made with protein powder to increase protein content.

Ingredients

Scale
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup vanilla or chocolate protein powder (whey/casein blend recommended)
  • 1/2 cup oat flour or almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1/2 cup pure maple syrup or zero-calorie sweetener equivalent
  • 1/4 cup melted coconut oil or butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, whisk together the dry ingredients: cocoa powder, protein powder, oat flour, baking powder, and salt.
  3. In a separate medium bowl, mix the wet ingredients: applesauce, maple syrup, melted coconut oil, eggs, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry mixture. Stir gently until just combined. Do not overmix.
  5. Fold in the chocolate chips, if using.
  6. Spread the batter evenly into the prepared baking pan.
  7. Bake for 20 to 25 minutes. The edges should look set, and a toothpick inserted near the center should come out with moist crumbs attached, not wet batter.
  8. Let the brownies cool completely in the pan on a wire rack before lifting them out using the parchment overhang and cutting them into squares. Cooling helps achieve a fudgier texture.

Notes

  • For a fudgier texture, use casein protein or a whey/casein blend. Pure whey protein can sometimes result in a slightly drier texture.
  • If you prefer a lower sugar option, substitute the maple syrup with a granulated zero-calorie sweetener equivalent to 1/2 cup sugar, adding 1-2 tablespoons of extra liquid (like milk or water) if the batter seems too stiff.
  • For gluten-free results, confirm your protein powder is certified gluten-free and use almond or oat flour.
