A simple recipe for making classic, flavorful French toast using a basic custard base.

Ingredients

Scale
  • 6 slices thick bread (brioche or challah recommended)
  • 2 large eggs
  • 1/2 cup milk (whole milk preferred)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon granulated sugar
  • 1 tablespoon butter, for cooking

Instructions

  1. In a shallow dish, whisk together the eggs, milk, vanilla extract, cinnamon, and sugar until well combined. This is your custard base.
  2. Heat a large skillet or griddle over medium heat. Add half of the butter and let it melt until it coats the surface.
  3. Dip each slice of bread into the custard mixture, allowing it to soak for about 15 to 20 seconds per side. Do not over-soak, or the bread will become soggy.
  4. Place the soaked bread onto the hot skillet. Cook for 3 to 4 minutes per side, until golden brown and cooked through.
  5. Remove the cooked French toast from the skillet and keep warm while you cook the remaining slices, adding more butter as needed.
  6. Serve immediately with your preferred toppings.

Notes

  • Use slightly stale bread; it absorbs the custard better without falling apart.
  • For richer flavor, substitute half the milk with heavy cream.
  • If you prefer a crispier exterior, add a pinch of salt to the custard mixture.
