Make small, crispy fried chicken sandwiches topped with a simple, spicy mayonnaise.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into 12 small pieces
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 2 large eggs, beaten
  • 1 cup buttermilk
  • 2 cups vegetable oil, for frying
  • 12 small slider buns
  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha or hot sauce
  • 1 teaspoon lime juice
  • 12 thin dill pickle slices

Instructions

  1. Combine flour, salt, pepper, paprika, and cayenne pepper in a shallow dish.
  2. In a second dish, whisk the eggs and buttermilk together.
  3. Dip each chicken piece first into the buttermilk mixture, letting excess drip off.
  4. Dredge the chicken thoroughly in the flour mixture, pressing to coat well.
  5. Heat the vegetable oil in a deep skillet to 350°F (175°C).
  6. Carefully place chicken pieces into the hot oil, ensuring not to overcrowd the pan. Fry for 4 to 6 minutes, turning once, until golden brown and cooked through (internal temperature of 165°F or 74°C).
  7. Remove chicken and place on a wire rack lined with paper towels to drain excess oil.
  8. While chicken drains, mix the mayonnaise, sriracha, and lime juice in a small bowl to create the spicy mayo.
  9. Lightly toast the slider buns if desired.
  10. Assemble the sliders: Spread spicy mayo on both halves of each bun. Place one crispy chicken piece on the bottom bun, top with a pickle slice, and place the top bun on.

Notes

  • For extra crispiness, chill the breaded chicken pieces in the refrigerator for 15 minutes before frying.
  • You can air fry the chicken at 400°F (200°C) for 12-15 minutes, flipping halfway, instead of deep frying.
  • Use shredded cabbage or a thin slice of onion as an alternative topping.
