Vegetable oil, for frying (or cooking spray for air fryer)
4 sandwich buns
4 leaves crisp lettuce
Pickle slices, for serving
For Garlic Sauce: 1/2 cup mayonnaise
2 cloves garlic, minced
1 tablespoon lemon juice
1 teaspoon Dijon mustard
Pinch of salt and pepper
Instructions
Prepare the chicken: Pound the chicken halves to an even 1/2-inch thickness.
Set up the breading station: In one shallow dish, mix the flour, salt, pepper, paprika, garlic powder, and cayenne pepper. In a second dish, whisk the eggs and milk together. In a third dish, place the panko breadcrumbs.
Dredge each chicken piece first in the flour mixture, shaking off excess. Dip it into the egg mixture, letting excess drip off. Finally, press firmly into the panko breadcrumbs to coat completely.
Make the garlic sauce: In a small bowl, combine the mayonnaise, minced garlic, lemon juice, Dijon mustard, salt, and pepper. Mix well and set aside.
Cook the chicken: Heat about 1 inch of vegetable oil in a heavy-bottomed skillet to 350 degrees Fahrenheit (175 degrees Celsius). Carefully place the breaded chicken in the hot oil, ensuring not to overcrowd the pan. Fry for 3 to 4 minutes per side until golden brown and cooked through (internal temperature of 165 degrees Fahrenheit). Remove and drain on a wire rack. (For air fryer: Spray chicken with oil and cook at 380 degrees Fahrenheit for 12-15 minutes, flipping halfway.)
Toast the buns lightly in a dry pan or under the broiler.
Assemble the sandwich: Spread a generous amount of garlic sauce on both halves of each bun. Place a piece of crispy chicken on the bottom bun. Top with lettuce and pickles. Place the top bun on the sandwich.
Notes
For extra crispiness, you can chill the breaded chicken in the refrigerator for 15 minutes before frying.
You can make the garlic sauce up to two days ahead of time and store it covered in the refrigerator.
If baking, place chicken on a wire rack set over a baking sheet and bake at 400 degrees Fahrenheit for 20-25 minutes, flipping once.
