Make classic Brussels waffles with a light, airy interior and a crisp exterior using this yeast-leavened batter recipe.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 1 packet active dry yeast
  • 1 1/2 cups milk, lukewarm
  • 2 large eggs, separated
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together the flour, sugar, and salt.
  2. In a separate small bowl, dissolve the yeast in the lukewarm milk. Let it stand for 5 minutes until slightly foamy.
  3. Add the egg yolks and melted butter to the milk mixture. Whisk until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix. The batter will be thin.
  5. Cover the bowl and let the batter rest in a warm place for 1 hour, or until doubled in size. This allows the yeast to work.
  6. Gently whisk the egg whites in a clean bowl until soft peaks form.
  7. Fold the beaten egg whites into the risen batter in two additions. Be gentle to keep the air in the batter.
  8. Preheat your deep-pocketed waffle iron according to the manufacturer’s directions. Lightly grease the plates if necessary.
  9. Pour the batter onto the hot iron, filling the pockets without overflowing. Cook until golden brown and crisp, usually 4 to 6 minutes, depending on your iron.
  10. Remove the waffles and serve immediately with your preferred toppings.

Notes

  • For the crispiest waffles, use a waffle iron that has adjustable temperature settings and allow the waffle to cook until steam stops escaping the iron.
  • If you prefer Liège waffles, substitute the batter for a dough containing pearl sugar. Brussels waffles use a thinner, yeast-risen batter.
  • You can prepare the batter the night before; let it rise, then gently fold in the egg whites just before cooking the next morning.
