Ingredients
Scale
1 large head cauliflower, cut into florets
3 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper.
In a large bowl, combine the cauliflower florets, olive oil, minced garlic, oregano, thyme, salt, and pepper. Toss until the cauliflower is evenly coated.
Spread the seasoned cauliflower in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary for better crisping.
Bake for 20 to 25 minutes, stirring halfway through, until the cauliflower is tender when pierced with a fork and lightly browned on the edges.
Remove from the oven, sprinkle with fresh parsley, and serve immediately.
Notes
For extra crispiness, you can increase the oven temperature to 425 degrees Fahrenheit for the last 5 minutes of cooking.
If you prefer a stronger garlic flavor, add one more clove of minced garlic.
This side dish pairs well with roasted chicken or fish.
