Ingredients
Scale
1/4 cup chia seeds
1 cup unsweetened almond milk (or other plant milk)
2 tablespoons unsweetened cocoa powder
1 to 2 tablespoons maple syrup (adjust to taste)
1/2 teaspoon vanilla extract
Pinch of salt
Instructions
In a jar or container, combine the almond milk, cocoa powder, maple syrup, vanilla extract, and salt. Whisk until the cocoa powder is fully dissolved and no lumps remain.
Add the chia seeds to the liquid mixture. Stir well for about one minute to prevent clumping at the bottom.
Let the mixture sit on the counter for 5 minutes, then stir again thoroughly. This second stir helps achieve a smooth, creamy texture.
Cover the container and place it in the refrigerator for at least 4 hours, or preferably overnight, until the pudding thickens.
Stir the pudding before serving. Add toppings if desired.
Notes
For a richer chocolate flavor, use high-quality Dutch-processed cocoa powder.
If the pudding is too thick in the morning, stir in a tablespoon of extra plant milk until you reach your preferred consistency.
For a sweeter pudding, increase the maple syrup to 2 tablespoons.
Toppings ideas include fresh berries, sliced banana, shredded coconut, or chopped nuts.
