Make a simple, creamy, and satisfying vegan chickpea salad sandwich filling that mimics classic deli salads. This recipe is quick and great for meal prep.

Ingredients

Scale
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1/2 cup vegan mayonnaise
  • 1/4 cup celery, finely chopped
  • 2 tablespoons red onion, finely chopped
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 4 slices whole wheat bread or preferred bread

Instructions

  1. Place the rinsed and drained chickpeas in a medium bowl.
  2. Use a fork or potato masher to coarsely mash the chickpeas. Aim for a texture that is mostly mashed but still has some whole pieces remaining for texture.
  3. Add the vegan mayonnaise, chopped celery, chopped red onion, dill, Dijon mustard, apple cider vinegar, garlic powder, pepper, and salt to the bowl.
  4. Mix all ingredients together until everything is well combined and the mixture is creamy.
  5. Taste the salad and adjust seasoning, adding more salt, vinegar, or mustard as needed for your preferred tanginess.
  6. Spoon the chickpea salad mixture onto your bread slices.
  7. Top with the second slice of bread to form a sandwich. Serve immediately or chill for later.

Notes

  • For a gluten-free option, serve this filling on gluten-free bread or large lettuce cups.
  • If you prefer a smoother texture, pulse the chickpeas briefly in a food processor before mixing in the other ingredients.
  • You can substitute celery with finely chopped pickles or relish for extra crunch and tang.
