  • 1 can (14 oz) sweetened condensed milk
  • 1 can (13.5 oz) coconut milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional: Whipped cream for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Place the pie crust on a baking sheet.
  3. In a large bowl, combine the mashed ube, sweetened condensed milk, coconut milk, eggs, vanilla extract, and salt.
  4. Whisk until smooth and well combined.
  5. Pour the ube filling into the pie crust.
  6. Bake for 45-55 minutes, or until the filling is set and a knife inserted near the center comes out clean.
  7. Let the pie cool completely on a wire rack before slicing and serving.

Notes

  • Ensure your ube is fully mashed for a smooth filling.
  • You can steam or boil fresh ube until tender before mashing.
