Make restaurant-quality tuna steak at home in under 10 minutes. You get tender, flavorful fish seared perfectly with a simple, rich garlic butter sauce.

Ingredients

Scale
  • 2 (6-ounce) tuna steaks (about 1 inch thick)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon lemon juice (optional, for brightness)

Instructions

  1. Pat the tuna steaks completely dry using paper towels. Season both sides evenly with salt and pepper. This step helps you get a good sear.
  2. Place a heavy-bottomed skillet (cast iron works best) over medium-high heat. Add the olive oil. Wait until the oil shimmers slightly.
  3. Carefully place the tuna steaks in the hot skillet. Sear for 1.5 to 2 minutes per side for rare to medium-rare. Do not move the steaks while searing.
  4. Reduce the heat to low. Add the butter to the skillet. Let the butter melt and foam slightly.
  5. Add the minced garlic to the melted butter. Cook for about 30 seconds until fragrant, being careful not to burn the garlic.
  6. Tilt the pan slightly and use a spoon to baste the melted garlic butter over the top of the tuna steaks continuously for 30 seconds.
  7. Remove the tuna steaks from the pan immediately. Place them on a cutting board.
  8. Squeeze the lemon juice over the steaks, if using, and sprinkle with fresh parsley.
  9. Let the tuna rest for 2 minutes before slicing against the grain. Serve right away.

Notes

  • For a soy-ginger glaze option, whisk 2 tablespoons of low-sodium soy sauce with 1 teaspoon of grated fresh ginger and 1 teaspoon of honey. Drizzle this mixture over the steaks immediately after removing them from the heat instead of using the lemon juice.
  • To achieve a blackened tuna steak, mix your seasoning blend (paprika, cayenne, onion powder, garlic powder) and press it firmly onto both sides of the tuna before searing.
  • The key to restaurant-style tuna steak is cooking it quickly over high heat to keep the center cool and tender.
