Ingredients

Scale
  • 1 (32 ounce) package frozen tater tots
  • 1 pound breakfast sausage, cooked and drained
  • 1 cup chopped onion
  • 1 cup chopped green bell pepper
  • 10 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Arrange the frozen tater tots in a single layer across the bottom of the prepared baking dish.
  3. Spread the cooked sausage evenly over the tater tots.
  4. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  5. Stir in 1 cup of the shredded cheese into the egg mixture.
  6. Pour the egg mixture evenly over the sausage and tater tots.
  7. Sprinkle the remaining 1 cup of shredded cheese over the top.
  8. Bake for 45 to 55 minutes, or until the eggs are set and the top is golden brown.
  9. Let the casserole rest for 5 minutes before slicing and serving.

Notes

  • For a crispier topping, bake the casserole uncovered.
  • You can prepare this casserole the night before. Assemble all ingredients except the final cheese layer, cover, and refrigerate. Add the cheese and bake in the morning, adding 5-10 minutes to the baking time.
  • Substitute bacon for sausage if you prefer.
  • For extra flavor, sauté the onion and pepper before adding them to the casserole.
