Prepare a flavorful weeknight dinner featuring pan-seared chicken coated in a thick, sweet, and spicy chili glaze, served over steamed rice.

Ingredients

Scale
  • 1.5 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 tablespoon vegetable oil
  • 1/4 cup soy sauce
  • 1/4 cup sweet chili sauce
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon cornstarch mixed with 2 teaspoons cold water (slurry)
  • 3 cups cooked white rice
  • 2 green onions, sliced (for garnish)
  • 1 teaspoon sesame seeds (for garnish)

Instructions

  1. Season the chicken pieces lightly with salt and pepper.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 6 to 8 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, combine the soy sauce, sweet chili sauce, honey or brown sugar, rice vinegar, ginger, and garlic. Bring the mixture to a simmer over medium heat.
  4. Whisk the cornstarch slurry one more time and pour it slowly into the simmering sauce, stirring constantly. Continue to cook for 1 to 2 minutes until the sauce thickens and becomes glossy.
  5. Return the cooked chicken to the skillet. Toss the chicken pieces gently until they are fully coated with the sticky glaze.
  6. Divide the cooked rice among serving bowls. Top the rice with the glazed chicken.
  7. Garnish each bowl with sliced green onions and sesame seeds before serving.

Notes

  • For extra vegetables, add 1 cup of sliced bell peppers or broccoli florets to the skillet after removing the chicken and cook until tender-crisp before adding the sauce back in.
  • If you prefer a spicier glaze, add 1/2 teaspoon of sriracha or red pepper flakes to the sauce mixture.
  • You can use pre-cooked rice to speed up the preparation time.
