Ingredients
Scale
1 cup cottage cheese
6 large eggs
1/2 cup shredded Gruyère cheese
1/4 cup cooked, crumbled bacon (for Bacon & Gruyère version)
1/4 cup chopped spinach and mushrooms (for Kale & Mushroom version)
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 teaspoon garlic powder
Instructions
Preheat your oven to 300°F (150°C) or prepare your Instant Pot for steaming.
Combine the cottage cheese and eggs in a blender. Blend until completely smooth. This step is key for the texture.
Stir in the salt, pepper, and garlic powder.
If using the Bacon & Gruyère variation, gently fold in the Gruyère cheese and bacon. If using Kale & Mushroom, fold in the cheese, spinach, and mushrooms.
Lightly grease a standard 7-cup silicone muffin mold or egg bite mold.
Pour the egg mixture evenly into the mold cups, filling them about 3/4 full.
For oven baking: Place the mold in a shallow baking dish. Pour hot water into the baking dish until it reaches halfway up the sides of the mold (water bath). Bake for 25 to 30 minutes, or until the centers are set.
For Instant Pot: Place the mold on the trivet inside the Instant Pot. Add 1 cup of water to the bottom. Cook on High Pressure for 8 minutes, followed by a 5-minute natural pressure release, then quick release the remaining pressure.
Carefully remove the egg bites from the mold and let them cool slightly before serving.
Notes
Using a blender to fully emulsify the cottage cheese and eggs creates the smooth, custardy texture.
A water bath (bain-marie) in the oven prevents the edges from becoming tough and helps mimic the sous vide result.
You can use Monterey Jack or white cheddar as substitutes for Gruyère.
These freeze well; cool completely, then store in an airtight container for up to one month. Reheat in the microwave.
