Ingredients
Scale
1 lb large shrimp, peeled and deveined
1 tbsp olive oil
1 cup uncooked white rice
1 1/2 cups water (for rice)
1 cup fresh broccoli florets
1/4 cup honey
3 tbsp soy sauce
2 tbsp rice vinegar
1 tbsp sriracha (adjust to taste)
4 cloves garlic, minced
1 tsp fresh ginger, grated
1 tbsp cornstarch
2 tbsp cold water (for slurry)
1/4 cup fresh cilantro, chopped (for topping)
1 lime, cut into wedges (for serving)
Instructions
Cook the rice: Combine rice and 1 1/2 cups water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Let stand, covered, for 5 minutes, then fluff with a fork. Stir in half of the chopped cilantro and the juice of half a lime.
Steam the broccoli: Place broccoli florets in a steamer basket over boiling water. Cover and steam for 4 to 6 minutes until tender-crisp. Set aside.
Prepare the sauce: In a small bowl, whisk together honey, soy sauce, rice vinegar, sriracha, minced garlic, and grated ginger. In a separate small bowl, mix cornstarch and 2 tablespoons of cold water to create a slurry.
Cook the shrimp: Heat olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 1 to 2 minutes per side until pink. Remove shrimp from the skillet and set aside.
Thicken the sauce: Pour the honey garlic mixture into the same skillet. Bring to a simmer. Whisk the cornstarch slurry again and pour it into the simmering sauce, stirring constantly until the sauce thickens, about 1 minute.
Glaze the shrimp: Return the cooked shrimp to the skillet. Toss gently to coat the shrimp completely in the spicy honey garlic sauce. Cook for 30 seconds to heat through.
Assemble the bowls: Divide the cilantro lime rice among serving bowls. Top the rice with steamed broccoli and the glazed shrimp. Garnish with remaining fresh cilantro and serve immediately with lime wedges.
Notes
For a lower sodium version, use low-sodium soy sauce.
If you prefer less spice, start with 1 teaspoon of sriracha and increase as desired.
Substitute basmati or jasmine rice for white rice if preferred.
