Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 large onion, chopped
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 4 medium potatoes, peeled and cubed
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups low-sodium chicken broth
  • 1/2 cup all-purpose flour
  • 1/2 cup cold water
  • 1/2 cup heavy cream (optional, for creaminess)
  • 1 cup frozen peas

Instructions

  1. Place the chicken, onion, carrots, celery, and potatoes into the basin of your slow cooker.
  2. Sprinkle the thyme, rosemary, salt, and pepper over the ingredients.
  3. Pour the chicken broth over everything in the slow cooker.
  4. Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the chicken is tender.
  5. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker.
  6. In a small bowl, whisk together the flour and cold water until smooth to create a slurry.
  7. Stir the flour slurry into the stew in the slow cooker.
  8. Stir in the heavy cream, if using, and the frozen peas.
  9. Cover and cook on high for an additional 15 to 20 minutes, or until the stew has thickened to your liking.
  10. Taste and adjust seasonings before serving hot.

Notes

  • For an extra savory flavor, add 1 teaspoon of dried parsley with the other herbs.
  • Serve this hearty slow cooker chicken stew over mashed potatoes, egg noodles, or with crusty bread for dipping.
  • If you prefer a thicker stew without cream, increase the flour slurry to 3/4 cup flour mixed with 3/4 cup cold water.
