Make this easy dinner with sausage, bell peppers, and onions cooked on one sheet pan for simple preparation and cleanup.

Ingredients

Scale
  • 1.5 lbs Italian sausage links (sweet or hot)
  • 3 large bell peppers (red, yellow, green), cut into 1-inch strips
  • 1 large yellow onion, cut into thick wedges
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a large rimmed baking sheet with parchment paper for easier cleanup.
  2. In a large bowl, combine the cut bell peppers and onion wedges.
  3. Drizzle the vegetables with 2 tablespoons of olive oil. Sprinkle with oregano, garlic powder, salt, and pepper. Toss until everything is evenly coated.
  4. Place the seasoned vegetables on one half of the prepared baking sheet.
  5. Prick the sausage links a few times with a fork. Place the sausages on the other half of the baking sheet. Drizzle the sausages with the remaining 1 tablespoon of olive oil.
  6. Bake for 25 to 30 minutes, flipping the sausages and tossing the vegetables halfway through the cooking time.
  7. Check the internal temperature of the sausage; it should reach 160 degrees Fahrenheit. The vegetables should be tender and slightly browned.
  8. Remove from the oven and serve immediately.

Notes

  • You can use any firm sausage, such as smoked sausage or chicken sausage, but adjust cooking time if necessary.
  • For extra flavor, add 1/2 teaspoon of red pepper flakes with the other seasonings.
  • Serve this dish over cooked rice, pasta, or inside hoagie rolls for a complete meal.
