Ingredients
Scale
1 pound fresh green beans, trimmed
4 slices thick-cut bacon, cut into 1/2-inch pieces
2 cloves garlic, minced
1 small shallot, thinly sliced
1 tablespoon apple cider vinegar
Salt, to taste
Black pepper, to taste
Instructions
Place the bacon pieces in a large skillet over medium heat. Cook the bacon slowly until it is crisp and the fat is rendered. Remove the crispy bacon pieces with a slotted spoon and set them aside on a paper towel-lined plate. Leave about 2 tablespoons of bacon fat in the skillet; discard any excess.
Add the sliced shallot to the skillet with the bacon fat and cook over medium heat for 2 minutes until softened.
Add the trimmed green beans to the skillet. Sauté the beans, stirring occasionally, for 5 to 7 minutes until they turn bright green and reach your desired tender-crisp texture.
Add the minced garlic to the skillet and cook for 1 minute until fragrant. Do not let the garlic burn.
Remove the skillet from the heat. Stir in the apple cider vinegar. Season the beans with salt and pepper to your taste.
Transfer the sautéed green beans to a serving dish. Sprinkle the reserved crispy bacon pieces over the top before serving.
Notes
For extra crunch, you can add 1/4 cup of toasted slivered almonds during the last minute of cooking.
If you prefer a stronger onion flavor, substitute the shallot with 1/4 cup of thinly sliced yellow onion.
If your bacon does not render enough fat, add 1 teaspoon of olive oil to the skillet before cooking the shallots.
