Make simple, crunchy dill pickles using this quick refrigerator method. These no-canning pickles are ready to eat in just 24 hours.

Ingredients

Scale
  • 2 lbs pickling cucumbers (small to medium size)
  • 4 cloves garlic, smashed
  • 1/2 cup white vinegar (5% acidity)
  • 1 1/2 cups water
  • 2 tablespoons kosher salt
  • 1 tablespoon granulated sugar
  • 1 teaspoon black peppercorns
  • 1 teaspoon mustard seeds
  • 2 sprigs fresh dill (or 1 teaspoon dill seed)

Instructions

  1. Wash the cucumbers well. Trim off the blossom end of each cucumber; this end contains enzymes that can soften the pickles.
  2. Cut the cucumbers into spears or slices, depending on your preference. Pack the cut cucumbers tightly into one or two clean pint-sized glass jars.
  3. Add the smashed garlic cloves, peppercorns, and mustard seeds to the jars. Place the dill sprigs on top of the cucumbers.
  4. In a small saucepan, combine the water, vinegar, kosher salt, and sugar. Heat over medium heat, stirring until the salt and sugar completely dissolve. Do not boil the mixture.
  5. Remove the brine from the heat and let it cool for about 10 minutes.
  6. Carefully pour the warm brine over the cucumbers in the jars, ensuring the cucumbers are fully submerged. Leave about 1/2 inch of headspace at the top of the jar.
  7. Seal the jars with lids. Let the jars cool to room temperature on the counter for about 1 hour.
  8. Transfer the jars to the refrigerator. Chill for a minimum of 24 hours before eating for best flavor and crispness.

Notes

  • For maximum crispness, soak the cucumbers in ice water for 30 minutes before cutting.
  • If you prefer a stronger dill flavor, use dill seed instead of fresh dill sprigs.
  • These pickles must stay refrigerated and are best eaten within 3 weeks.
