Stop buying bottled sauce! Learn how to make this easy homemade teriyaki sauce that is thick, glossy, and packed with sweet and savory flavor. It works perfectly as a marinade, glaze, or stir-fry sauce base.

Ingredients

Scale
  • 1/2 cup low sodium soy sauce
  • 1/2 cup water
  • 1/3 cup packed brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch

Instructions

  1. Combine the soy sauce, water, brown sugar, rice vinegar, grated ginger, minced garlic, and sesame oil in a small saucepan. Whisk these ingredients together until the brown sugar dissolves.
  2. Bring the mixture to a simmer over medium heat, stirring occasionally. Let it simmer for about 2 minutes.
  3. In a separate small bowl, whisk the cornstarch with 2 tablespoons of cold water to create a slurry.
  4. Pour the cornstarch slurry into the simmering sauce while whisking constantly.
  5. Continue to cook and whisk for about 1 to 2 minutes until the sauce thickens significantly and becomes glossy.
  6. Remove the sauce from the heat. It will thicken more as it cools.
  7. Use immediately as a glaze or stir fry sauce, or store it in an airtight container in the refrigerator.

Notes

  • This recipe makes a fantastic teriyaki marinade for chicken, salmon, or tofu. Let your protein sit in the sauce for at least 30 minutes before cooking.
  • For an extra layer of flavor, add 1/4 teaspoon of white pepper to the sauce mixture before heating.
  • If you prefer a sweeter glaze, increase the brown sugar to 1/2 cup.
  • This sauce is excellent as a quick dipping sauce for spring rolls or dumplings.
