Make restaurant-style fried noodles at home in just 15 minutes. This easy soy sauce stir fry recipe delivers savory, satisfying flavor perfect for a fast weeknight meal or quick lunch.

Ingredients

Scale
  • 1 pound dried noodles (lo mein or yakisoba style)
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 cup mixed vegetables (e.g., shredded cabbage, sliced carrots, frozen peas)
  • 2 tablespoons soy sauce (low sodium preferred)
  • 1 tablespoon dark soy sauce (for color)
  • 1 teaspoon sesame oil
  • 1/2 teaspoon white pepper
  • 2 green onions, sliced (for garnish)

Instructions

  1. Cook the noodles according to package directions until just tender. Drain them well and set aside. If using fresh noodles, you may only need to blanch them briefly.
  2. Heat the vegetable oil in a large wok or skillet over medium-high heat until shimmering. This high heat is key for great fried noodles.
  3. Add the minced garlic and grated ginger to the wok. Stir fry quickly for about 30 seconds until fragrant. Do not let them burn.
  4. Add your mixed vegetables to the wok. Stir fry for 2 to 3 minutes until they start to soften but still have some crunch.
  5. Add the cooked and drained noodles to the wok. Toss everything together to combine.
  6. Pour the soy sauce, dark soy sauce, sesame oil, and white pepper over the noodles. Toss continuously for 2 to 3 minutes, ensuring the sauce evenly coats every strand. This is where the savory Asian flavor develops.
  7. Taste the noodles and adjust seasoning if needed. You may add a splash more soy sauce for saltiness.
  8. Remove the pan fried noodles from the heat. Transfer them to serving plates and garnish generously with sliced green onions. Serve immediately for the best homemade noodle takeout experience.

Notes

  • For a more complete meal, add 1 cup of cooked, sliced chicken, shrimp, or tofu during step 4 with the vegetables.
  • If you want crispier noodles, let the cooked noodles sit for 10 minutes after draining before adding them to the wok. This dries the surface slightly.
  • This recipe works well with almost any noodle type, but thicker wheat noodles hold up best to the stir-frying process.
