A refreshing and flavorful cold sesame noodle dish, perfect for a quick and satisfying meal prep.

Ingredients

Scale
  • 8 ounces dried noodles (spaghetti, linguine, or soba noodles work well)
  • 1/4 cup tahini
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup (for vegan option)
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1/4 cup hot water (or more, to reach desired consistency)
  • Optional toppings: chopped scallions, toasted sesame seeds, shredded carrots, cucumber ribbons, cooked chicken or tofu

Instructions

  1. Cook the noodles according to package directions. Drain and rinse under cold water to stop the cooking process and prevent sticking.
  2. While the noodles are cooking, prepare the sesame sauce. In a medium bowl, whisk together tahini, soy sauce, rice vinegar, sesame oil, honey or maple syrup, grated ginger, and minced garlic.
  3. Gradually whisk in the hot water, one tablespoon at a time, until the sauce reaches your desired smooth consistency.
  4. In a large bowl, combine the cooled noodles with the sesame sauce. Toss gently to coat the noodles evenly.
  5. Divide the noodles into meal prep containers. Top with your favorite optional toppings.
  6. Refrigerate until ready to serve.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the sauce.
  • The sauce can be made ahead of time and stored in the refrigerator.
  • Adjust the amount of hot water to achieve your preferred sauce thickness.
