Ingredients
Scale
2 shots espresso or 1/2 cup strong brewed coffee
1/4 cup pumpkin puree (not pumpkin pie filling)
1/2 cup milk (dairy or non-dairy)
2 tablespoons maple syrup or sweetener of choice
1/2 teaspoon pumpkin pie spice blend
1/4 teaspoon vanilla extract
Whipped cream and extra spice for topping (optional)
Instructions
Combine the pumpkin puree, maple syrup, pumpkin pie spice, and vanilla extract in a small saucepan.
Add the milk to the saucepan. Heat the mixture over medium heat, whisking constantly until it is hot and steaming, but do not let it boil.
Remove the milk mixture from the heat. If you prefer a very smooth texture, you can strain the mixture through a fine-mesh sieve to remove any pumpkin solids.
Pour the hot espresso or strong coffee into your favorite mug.
Slowly pour the warm pumpkin-spice milk mixture over the coffee.
Top with whipped cream and a light dusting of extra pumpkin pie spice or cinnamon.
For an iced pumpkin spice latte, skip heating the milk. Instead, combine all ingredients (except whipped cream) in a jar, shake well, and pour over ice.
Notes
You can make a large batch of the pumpkin spice sauce ahead of time by combining the pumpkin puree, sweetener, spices, and a little water or milk, then simmering until thick. Store this sauce in the refrigerator for up to one week.
For a stronger coffee flavor, increase the espresso to three shots.
If you do not have pumpkin pie spice, mix 1/4 teaspoon cinnamon, 1/8 teaspoon ground ginger, a pinch of ground cloves, and a pinch of ground nutmeg.
