Enjoy a delicious and easy Pumpkin French Toast Bake, perfect for a make-ahead breakfast or brunch. This warm and comforting dish is packed with pumpkin flavor and ideal for busy mornings.

Ingredients

Scale
  • 8 cups challah or brioche bread, cubed
  • 4 large eggs
  • 2 cups milk
  • 1/2 cup pumpkin puree
  • 1/3 cup maple syrup, plus more for serving
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup chopped pecans or walnuts (optional)

Instructions

  1. Arrange the bread cubes in a greased 9×13 inch baking dish.
  2. In a large bowl, whisk together the eggs, milk, pumpkin puree, maple syrup, pumpkin pie spice, cinnamon, nutmeg, and salt until well combined.
  3. Pour the egg mixture evenly over the bread cubes, ensuring all pieces are moistened. Press down gently to help the bread absorb the liquid.
  4. Cover the dish and refrigerate for at least 4 hours, or preferably overnight.
  5. Preheat your oven to 350°F (175°C).
  6. If using, sprinkle the chopped nuts over the top of the bake.
  7. Bake for 40-50 minutes, or until the French toast bake is set and golden brown on top.
  8. Let it cool slightly before serving. Serve warm with extra maple syrup if desired.

Notes

  • For a richer flavor, you can use half-and-half or heavy cream instead of milk.
  • Adjust the amount of pumpkin pie spice to your preference.
  • If you don’t have pumpkin pie spice, you can create your own blend with cinnamon, ginger, cloves, and nutmeg.
  • This bake can be assembled up to 2 days in advance and stored in the refrigerator.
