Ingredients
Scale
1.5 cup frozen pineapple chunks
0.5 cup full-fat coconut milk (canned)
0.5 cup water or unsweetened almond milk
1 tablespoon shredded unsweetened coconut
1 teaspoon lime juice (optional)
1 teaspoon sweetener (honey or maple syrup, optional)
Instructions
Place the frozen pineapple chunks, coconut milk, water or almond milk, shredded coconut, lime juice, and sweetener (if using) into a high-speed blender.
Start blending on a low speed, gradually increasing to high.
Use the tamper tool if necessary to push the ingredients toward the blades until the mixture is completely smooth and creamy.
If the smoothie is too thick, add liquid one tablespoon at a time until you reach your desired consistency.
Pour immediately into a glass and serve.
Notes
For a thicker smoothie, use only frozen pineapple and reduce the added liquid slightly.
Substitute full-fat coconut milk with light coconut milk for a lower fat content, but the texture will be less creamy.
Add 1 scoop of vanilla protein powder for a protein boost.
To make this a vegan recipe, use maple syrup as the sweetener.
