Ingredients

Scale
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup chopped pecans, divided
  • 1/2 cup granulated sugar
  • 1/4 cup heavy cream
  • 2 tablespoons light corn syrup
  • 1/4 cup butter

Instructions

  1. Beat the softened cream cheese, powdered sugar, brown sugar, softened butter, vanilla extract, and salt together in a large bowl until the mixture is smooth and creamy.
  2. Fold in 1/2 cup of the chopped pecans into the cream cheese mixture.
  3. Spread the cream cheese mixture evenly into a shallow serving dish.
  4. In a small saucepan, combine the granulated sugar, heavy cream, corn syrup, and 1/4 cup butter.
  5. Cook over medium heat, stirring constantly, until the sugar dissolves and the mixture bubbles.
  6. Reduce heat to low and cook for 3 minutes without stirring.
  7. Remove from heat and stir in the remaining 1/2 cup of chopped pecans.
  8. Pour the warm pecan mixture evenly over the cream cheese base.
  9. Chill the dip in the refrigerator for at least 2 hours before serving.

Notes

  • Serve this dip cold with graham crackers, apple slices, pretzels, or vanilla wafers for dipping.
  • You can prepare the base a day ahead and keep it covered in the refrigerator. Add the topping just before serving.
  • For a richer flavor, use dark brown sugar instead of light brown sugar in the base.
