Ingredients

Scale
  • 6 cups sliced ripe peaches (about 2 1/2 pounds)
  • 1/4 cup lemon juice
  • 6 cups granulated sugar
  • 1 box (1.75 ounces) powdered fruit pectin

Instructions

  1. Prepare your canning supplies: wash jars, lids, and bands in hot soapy water. Sterilize jars by boiling them in water for 10 minutes. Keep jars hot until ready to fill.
  2. Combine sliced peaches and lemon juice in a large pot.
  3. Cook over medium heat, stirring occasionally, until peaches are soft, about 5-10 minutes.
  4. Mash peaches with a potato masher or immersion blender to your desired consistency.
  5. Measure 4 cups of the mashed peach mixture into a large, heavy-bottomed pot.
  6. Add sugar and pectin to the pot. Stir well.
  7. Bring the mixture to a rolling boil over high heat, stirring constantly.
  8. Boil hard for 1 minute, still stirring constantly.
  9. Remove from heat immediately. Skim off any foam with a spoon.
  10. Ladle hot jam into prepared jars, leaving 1/4 inch headspace.
  11. Wipe jar rims clean with a damp cloth. Place lids on jars and screw on bands until fingertip tight.
  12. Process jars in a boiling water bath for 10 minutes (adjust for altitude if necessary).
  13. Remove jars from the canner and let them cool on a wire rack. Check seals after 12-24 hours.

Notes

  • Ensure your peaches are ripe for the best flavor and pectin content.
  • Adjust sugar to your preference, but be aware that reducing sugar may affect setting.
  • Properly sealed jars can be stored in a cool, dark place for up to a year.
