Make a flavorful, creamy Cajun pasta with sausage using just one pot for simple cleanup.

Ingredients

Scale
  • 1 pound smoked sausage or andouille sausage, sliced
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon Cajun seasoning (or more to taste)
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 8 ounces dry pasta (penne or rotini work well)
  • 1/2 cup heavy cream
  • 1/2 cup shredded Parmesan cheese
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Place the sliced sausage in a large pot or Dutch oven over medium heat. Cook until browned, about 5 minutes. Remove the sausage with a slotted spoon and set aside, leaving about 1 tablespoon of drippings in the pot.
  2. Add the olive oil to the pot. Add the chopped onion and bell pepper. Cook until softened, about 5 minutes.
  3. Add the minced garlic and cook for 1 minute until fragrant.
  4. Pour in the chicken broth, diced tomatoes (with juice), Cajun seasoning, oregano, and black pepper. Bring the mixture to a simmer.
  5. Add the dry pasta to the pot. Stir well to submerge the pasta.
  6. Cover the pot and reduce the heat to medium-low. Cook according to the pasta package directions, usually 10-15 minutes, stirring occasionally to prevent sticking. The liquid should be mostly absorbed.
  7. Stir in the heavy cream and the cooked sausage. Heat through for 2 minutes.
  8. Remove the pot from the heat. Stir in the shredded Parmesan cheese until the sauce is creamy.
  9. Serve immediately, garnished with fresh parsley.

Notes

  • Adjust the amount of Cajun seasoning to control the spice level for your preference.
  • If the sauce seems too thick after adding the cream, add a splash more broth or milk until you reach your desired consistency.
  • You can substitute smoked turkey sausage for a lower-fat option.
