Make tender steak bites and roasted potatoes in one pan with a rich garlic butter sauce for a simple weeknight dinner with minimal cleanup.

Ingredients

Scale
  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • 1.5 lbs small potatoes (like Yukon Gold or red), quartered
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon dried thyme
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the quartered potatoes with 1 tablespoon of olive oil, salt, and pepper on a large rimmed baking sheet. Spread them in a single layer.
  3. Roast the potatoes for 15 minutes until they start to soften.
  4. While potatoes roast, pat the steak cubes dry and season them generously with salt and pepper.
  5. In a small saucepan over low heat, melt the butter. Add the minced garlic, rosemary, and thyme. Cook for 1 minute until fragrant. Remove from heat.
  6. Remove the baking sheet from the oven. Push the potatoes to one side of the pan. Add the seasoned steak cubes to the empty side of the pan, ensuring they are in a single layer.
  7. Brush or drizzle half of the garlic butter mixture over the steak cubes.
  8. Return the pan to the oven and roast for another 8 to 12 minutes for medium-rare steak (adjust time for your preferred doneness).
  9. Remove the pan from the oven. Drizzle the remaining garlic butter over both the steak and potatoes. Toss gently to coat everything.
  10. Garnish with fresh parsley before serving immediately.

Notes

  • For extra flavor, add 1 cup of broccoli florets or sliced mushrooms during the last 5 minutes of cooking.
  • If you prefer a crispier potato exterior, you can parboil the potatoes for 5 minutes before tossing them with oil and roasting.
  • Use a cast-iron skillet if you want to sear the steak bites on the stovetop after roasting the potatoes, then return everything to the oven to finish.
