Ingredients
Scale
1 cup heavy cream
1/2 cup unsalted butter
2 cloves garlic, minced
1 1/2 cups freshly grated Parmesan cheese
1/4 teaspoon salt
1/4 teaspoon black pepper
Pinch of nutmeg (optional)
Instructions
Melt the butter in a medium saucepan over medium heat.
Add the minced garlic to the melted butter and cook for about 1 minute until fragrant. Do not let the garlic brown.
Pour in the heavy cream and bring the mixture to a gentle simmer, stirring occasionally. Reduce the heat to low.
Whisk in the grated Parmesan cheese slowly until the sauce is smooth and fully incorporated.
Season with salt, pepper, and a pinch of nutmeg, if using.
Continue to cook on low heat for 2 to 3 minutes, stirring constantly, until the sauce thickens slightly. Do not boil.
Remove from heat and serve immediately over hot fettuccine or use as a dipping sauce.
Notes
Use freshly grated Parmesan cheese for the best melting consistency and flavor. Pre-shredded cheese often contains anti-caking agents that make the sauce grainy.
If the sauce becomes too thick upon standing, whisk in a tablespoon of milk or reserved pasta water to reach your desired consistency.
This sauce pairs well with cooked chicken or steamed broccoli.
