- 2 ripe bananas
- 2 cups rolled oats
- 2 large eggs
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 cup milk (dairy or non-dairy)
- Cooking spray or oil for the griddle
- Place the rolled oats, bananas, eggs, baking powder, vanilla, cinnamon, and milk into a blender.
- Blend the mixture until it is mostly smooth. A few small oat flecks are acceptable for texture.
- Let the batter rest for 5 minutes to allow the oats to absorb moisture.
- Heat a lightly oiled griddle or large non-stick pan over medium heat.
- Pour 1/4 cup of batter onto the hot griddle for each pancake.
- Cook for 3 to 4 minutes per side, until golden brown and bubbles appear on the surface.
- Flip carefully and cook the second side until done.
- Serve immediately with your preferred toppings.
Notes
- For a thicker batter, reduce the milk slightly.
- If you want extra protein, add 1 scoop of unflavored or vanilla protein powder to the blender.
- Use gluten-free rolled oats if you need a gluten-free option.
