- 1/2 cup unsalted butter
- 1/2 cup granulated sugar
- 1/2 cup milk
- 1/4 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 3 cups quick-cooking rolled oats
- Combine the butter, sugar, milk, cocoa powder, and salt in a medium saucepan.
- Place the saucepan over medium heat. Stir constantly until the mixture reaches a full, rolling boil that cannot be stirred down.
- Boil the mixture for exactly 1 minute without stirring after the boil starts.
- Remove the saucepan from the heat immediately. Stir in the vanilla extract.
- Quickly add the rolled oats to the chocolate mixture and stir until the oats are completely coated.
- Drop rounded tablespoons of the mixture onto wax paper or parchment paper laid on a baking sheet.
- Let the cookies cool and set completely at room temperature for about 30 minutes before serving.
Notes
- Use quick-cooking oats for the best texture; old-fashioned oats may result in a looser set.
- Do not overcook the sugar mixture after it boils, or the cookies may become crumbly.
- Work quickly once the oats are added, as the mixture sets fast.
