Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter
  • 4 ounces unsweetened chocolate, chopped
  • 1 1/2 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional)
  • For the Miso Caramel:
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/2 cup heavy cream
  • 4 tablespoons unsalted butter, cut into pieces
  • 1 teaspoon white miso paste

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
  2. In a medium saucepan, melt the butter and chopped unsweetened chocolate over low heat, stirring until smooth. Remove from heat.
  3. Stir in the granulated sugar and vanilla extract.
  4. Beat in the eggs one at a time until well combined.
  5. Gradually stir in the flour and salt until just combined. Do not overmix.
  6. Fold in the nuts, if using.
  7. Pour half of the batter into the prepared baking pan.
  8. To make the miso caramel, combine 1 cup granulated sugar and 1/4 cup water in a small saucepan. Cook over medium heat, without stirring, until the sugar dissolves and turns an amber color.
  9. Carefully stir in the heavy cream and butter until smooth. Whisk in the miso paste until fully incorporated.
  10. Drizzle half of the miso caramel over the batter in the pan.
  11. Pour the remaining batter over the caramel.
  12. Drizzle the rest of the miso caramel on top. Use a knife or skewer to swirl the caramel into the batter.
  13. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached.
  14. Let cool completely in the pan before cutting into squares.

Notes

  • For an extra fudgy brownie, do not overbake.
  • The miso caramel can be made ahead of time and stored in the refrigerator. Reheat gently before drizzling.
  • Experiment with different types of miso for subtle flavor variations.
