Ingredients
Scale
1 (15 ounce) can corn, drained
8 ounces cream cheese, softened
1/2 cup mayonnaise
1/2 cup sour cream
1 cup shredded Monterey Jack cheese
1/2 cup Cotija cheese, crumbled (or Feta)
1/4 cup fresh cilantro, chopped
2 tablespoons lime juice
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (optional, for heat)
Salt and black pepper to taste
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8-inch pie dish or small oven-safe skillet.
In a medium bowl, combine the softened cream cheese, mayonnaise, and sour cream. Mix until smooth.
Stir in the drained corn, half of the Monterey Jack cheese, half of the Cotija cheese, cilantro, lime juice, chili powder, smoked paprika, and cayenne pepper (if using). Mix until all ingredients are incorporated.
Season the mixture with salt and pepper. Taste and adjust seasonings as needed.
Transfer the dip mixture to your prepared baking dish.
Top the dip evenly with the remaining Monterey Jack cheese and Cotija cheese.
Bake for 15 to 20 minutes, or until the dip is heated through and the cheese topping is melted and bubbly brown in spots.
Let the dip cool for 5 minutes before serving hot with tortilla chips.
Notes
For a smoky flavor boost, roast the corn kernels in a dry skillet over medium-high heat until lightly charred before mixing them into the dip.
If you prefer a stovetop version, combine all ingredients except the top layer of cheese in a saucepan over medium heat. Stir constantly until hot and creamy, about 8 minutes. Top with cheese and cover until melted.
