Ingredients
Scale
1 pound cooked, peeled, and deveined shrimp, chilled
2 cups tomato juice
1 cup clamato juice (optional, omit for Clamato Free)
1/2 cup fresh lime juice
1/2 cup ketchup
1/4 cup finely chopped white onion
1/4 cup finely chopped cilantro
1/2 cup diced avocado
1/2 cup diced tomato
1-2 tablespoons hot sauce (like Valentina or Cholula)
1 teaspoon Worcestershire sauce
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper
1/4 cup chopped jalapeño or serrano pepper (seeds removed for less heat)
Lime wedges, for serving
Tortilla chips or saltine crackers, for serving
Instructions
If your shrimp are large, cut them into bite-sized pieces. Place the shrimp in a large glass bowl.
In a separate bowl, whisk together the tomato juice, clamato juice (if using), lime juice, ketchup, hot sauce, and Worcestershire sauce.
Stir in the chopped onion, cilantro, jalapeño or serrano pepper, salt, and pepper into the liquid mixture.
Pour the sauce mixture over the chilled shrimp. Stir gently to combine.
Cover the bowl and refrigerate for at least 1 hour, allowing the flavors to meld. Do not chill for more than 4 hours, as the shrimp can become tough.
Just before serving, gently fold in the diced avocado and diced tomato.
Serve immediately in chilled bowls or glasses, garnished with extra cilantro and served with lime wedges and chips or crackers.
Notes
For a Clamato Free version, substitute the clamato juice with an equal amount of extra tomato juice and add 1 teaspoon of chicken bouillon powder for depth of flavor.
You can use pre-cooked, frozen shrimp; just thaw them completely and chill them before mixing.
Taste the sauce before adding the shrimp and adjust the salt or hot sauce to your preference.
