A crisp and light salad featuring cucumbers, feta, olives, and tomatoes tossed in a simple lemon vinaigrette. This recipe is quick to prepare and perfect as a healthy side dish.

Ingredients

Scale
  • 3 large cucumbers, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup Kalamata olives, pitted and halved
  • 1/4 cup finely chopped red onion
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh mint, chopped
  • For the Vinaigrette:
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the cucumbers by slicing them thinly. If you prefer less water content, lightly salt the slices and let them sit for 10 minutes, then gently pat them dry with a paper towel.
  2. In a large bowl, combine the sliced cucumbers, cherry tomatoes, feta cheese, Kalamata olives, and red onion.
  3. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper to make the vinaigrette.
  4. Pour the vinaigrette over the cucumber and vegetable mixture. Toss gently to coat everything evenly.
  5. Stir in the fresh parsley and mint just before serving.
  6. Chill for 15 minutes if time allows before serving for best flavor integration.

Notes

  • For a tangier flavor, add 1 teaspoon of red wine vinegar to the vinaigrette.
  • You can substitute dill for mint if you prefer a different fresh herb profile.
  • This salad tastes best when served the same day it is made.
