You deserve mashed potatoes that are incredibly good without being complicated to prepare. Follow these steps to achieve that perfect, melt-in-your-mouth texture every time you cook for a truly comforting side dish.

Ingredients

Scale
  • 3 lbs Russet or Yukon Gold potatoes, peeled and quartered
  • 1 cup whole milk (warmed)
  • 8 tablespoons unsalted butter (cut into pieces, softened)
  • 1 teaspoon salt, plus more for boiling water
  • 1/2 teaspoon black pepper
  • 1/4 cup sour cream (optional, for extra creaminess)

Instructions

  1. Place the peeled and quartered potatoes in a large pot. Cover them with cold water by about one inch. Add 1 tablespoon of salt to the water.
  2. Bring the water to a boil over high heat. Once boiling, reduce the heat slightly to maintain a steady, rolling boil. Cook for 15 to 20 minutes, or until the potatoes are completely fork-tender.
  3. While the potatoes cook, warm the milk in a small saucepan or microwave until it is hot but not boiling. Keep the butter at room temperature.
  4. Drain the potatoes thoroughly in a colander. Let them sit in the colander for 3 to 5 minutes to allow excess steam and moisture to evaporate. This step is key for fluffy mashed potatoes.
  5. Return the drained potatoes to the empty, warm pot. Place the pot over very low heat for about 1 minute, gently shaking the pot to dry them further. Remove from heat.
  6. Add the softened butter pieces to the potatoes. Mash them gently with a potato masher until the butter is mostly incorporated. Do not overmix at this stage.
  7. Gradually pour in the warm milk while continuing to mash or gently stir until you reach your desired consistency. If using, stir in the sour cream now for extra richness.
  8. Season with 1 teaspoon of salt and 1/2 teaspoon of pepper. Taste and adjust seasoning as needed. Serve immediately for the best texture.

Notes

  • For the best texture, use starchy potatoes like Russets. If you prefer a naturally buttery flavor, use Yukon Golds.
  • Warm the milk and butter before adding them. Cold dairy will cool down the potatoes and make them gluey.
  • Avoid using a food processor or electric mixer, as this develops the starch too much, resulting in gummy potatoes. A hand masher or ricer works best for smooth mashed potatoes.
  • If you need to keep them warm before serving, place the pot over a double boiler or use a slow cooker on the ‘Keep Warm’ setting.
