Prepare flavorful cheese cubes marinated in oil, herbs, and spices. This recipe works well as a make-ahead appetizer for parties or snacks.

Ingredients

Scale
  • 1 pound firm cheese (cheddar, havarti, or mozzarella), cut into 1-inch cubes
  • 1 cup olive oil
  • 2 cloves garlic, thinly sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon black peppercorns
  • 1 bay leaf

Instructions

  1. Place the cheese cubes in a clean, non-reactive container, such as a glass jar or dish.
  2. In a small bowl, combine the olive oil, sliced garlic, oregano, basil, red pepper flakes, and peppercorns. Stir well.
  3. Pour the seasoned oil mixture over the cheese cubes, ensuring all pieces are submerged. Add the bay leaf.
  4. Cover the container tightly.
  5. Refrigerate for at least 24 hours, or up to 3 days, to allow the cheese to absorb the flavors.
  6. Before serving, let the cheese sit at room temperature for 15 minutes. Serve with toothpicks alongside crackers or pita chips.

Notes

  • Use a variety of cheeses for visual appeal and flavor contrast.
  • For extra flavor, add a few sprigs of fresh rosemary or thyme to the marinade.
  • Drain off some of the excess oil before serving if desired, but keep some oil coating the cheese.
