- 2 medium sweet potatoes
- 1 tablespoon olive oil
- 1/2 teaspoon chili powder
- 1/4 teaspoon cumin
- Salt and pepper to taste
- 1/2 cup cooked shredded chicken or turkey
- 1/4 cup black beans, rinsed and drained
- 1/4 cup corn
- 2 tablespoons salsa
- 2 tablespoons plain Greek yogurt
- 1 tablespoon chopped cilantro
- Preheat your oven to 400°F (200°C).
- Wash the sweet potatoes and prick them several times with a fork.
- Rub the sweet potatoes with olive oil, chili powder, cumin, salt, and pepper.
- Place the sweet potatoes directly on the oven rack and bake for 45-60 minutes, or until tender.
- Let the sweet potatoes cool slightly, then slice them lengthwise.
- Carefully scoop out most of the flesh, leaving a thin shell.
- Mash the scooped-out sweet potato flesh with the shredded chicken, black beans, and corn.
- Spoon the mixture back into the sweet potato skins.
- Return the stuffed sweet potatoes to the oven for 10-15 minutes, or until heated through and slightly golden.
- Top with salsa and Greek yogurt. Garnish with cilantro before serving.
Notes
- For a vegetarian option, use seasoned mashed chickpeas or lentils instead of chicken.
- Add your favorite toppings like avocado, jalapeños, or a sprinkle of cheese.
- Make sure the sweet potato shells are sturdy enough to hold the filling.
