- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 teaspoon curry powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon turmeric
- 1/4 teaspoon cayenne pepper (optional)
- 1 cup red lentils, rinsed
- 4 cups vegetable broth
- 1 large sweet potato, peeled and cubed
- 1 (14 ounce) can diced tomatoes, undrained
- 1 (13.5 ounce) can coconut milk
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic and ginger and cook for 1 minute more until fragrant.
- Stir in curry powder, cumin, turmeric, and cayenne pepper (if using). Cook for 30 seconds, stirring constantly.
- Add the rinsed lentils, vegetable broth, sweet potato, and diced tomatoes. Bring to a boil.
- Reduce heat, cover, and simmer for 20-25 minutes, or until lentils and sweet potatoes are tender.
- Stir in the coconut milk. Heat through, but do not boil.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh cilantro.
Notes
- For a spicier curry, add more cayenne pepper or a pinch of red pepper flakes.
- You can substitute brown or green lentils for red lentils, but they may require a longer cooking time.
- Add other vegetables like spinach or peas in the last 5-10 minutes of cooking.
