Make these soft, chewy lemon crinkle cookies bursting with zesty lemon flavor. The powdered sugar coating creates a beautiful crinkled top for this refreshing dessert.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon fresh lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar, for rolling

Instructions

  1. Whisk together the flour, baking powder, and salt in a medium bowl. Set aside.
  2. In a large bowl, beat the softened butter and granulated sugar with an electric mixer until light and fluffy. This step is key for soft cookies.
  3. Beat in the egg, lemon zest, lemon juice, and vanilla extract until just combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a soft dough forms. Do not overmix.
  5. Place the powdered sugar in a shallow dish.
  6. Scoop the dough into balls, about 1 tablespoon each. Roll each dough ball completely in the powdered sugar until fully coated.
  7. Place the coated dough balls onto baking sheets lined with parchment paper, leaving about 2 inches between them.
  8. Bake at 350°F (175°C) for 10 to 12 minutes. The edges should be set, but the centers will look slightly underdone.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. The crinkles will set as they cool.

Notes

  • For the best zesty lemon flavor, use fresh lemon zest and juice, not bottled.
  • If the dough feels too sticky to handle, chill it for 15 to 20 minutes before rolling in sugar.
  • You can make the dough ahead of time and store it, covered, in the refrigerator for up to 3 days. Roll and bake when ready.
