Make low-carb taco filling and bake it inside bell peppers for a satisfying keto dinner.

Ingredients

Scale
  • 4 large bell peppers (any color)
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 packet (or 2 tablespoons) low-carb taco seasoning
  • 1/2 cup water
  • 4 ounces cream cheese, softened
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1/2 cup sour cream

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a baking dish.
  2. Cut the bell peppers in half lengthwise and remove the seeds and membranes. Place the pepper halves cut-side up in the prepared baking dish.
  3. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
  4. Add the ground beef to the skillet. Cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  5. Stir in the low-carb taco seasoning and water. Bring the mixture to a simmer and cook for 5 minutes, allowing the liquid to reduce slightly.
  6. Remove the skillet from the heat. Stir in the softened cream cheese, half of the shredded cheese (1/2 cup), and the sour cream until well combined.
  7. Spoon the taco filling evenly into the bell pepper halves.
  8. Top each stuffed pepper with the remaining 1/2 cup of shredded cheese.
  9. Bake for 25 to 30 minutes, or until the peppers are tender and the cheese is melted and bubbly.

Notes

  • Use a keto-approved taco seasoning mix that avoids added sugars and starches.
  • For extra fat, mix 2 tablespoons of melted butter into the ground beef mixture before adding the cheese.
  • Serve with keto-friendly toppings like guacamole, avocado slices, or plain sour cream. Avoid regular salsa due to sugar content.
