Ingredients
Scale
1.5 lb cooked, shredded chicken breast
1/2 cup keto-friendly buffalo sauce (check for no added sugar)
1/4 cup unsalted butter, melted
2 tablespoons cream cheese, softened
1 teaspoon apple cider vinegar
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
8 large butter lettuce leaves or romaine hearts, separated and washed
Optional toppings: 2 tablespoons blue cheese dressing or ranch dressing, chopped celery
Instructions
In a medium bowl, combine the melted butter, softened cream cheese, apple cider vinegar, garlic powder, salt, and pepper. Whisk until smooth.
Add the shredded cooked chicken and the keto-friendly buffalo sauce to the bowl. Stir well until the chicken is completely coated in the sauce mixture.
Heat the chicken mixture in a skillet over medium heat for 5 to 7 minutes, stirring occasionally, until heated through.
Arrange the washed lettuce leaves on a serving platter.
Spoon the hot buffalo chicken mixture into the center of each lettuce cup.
Top each wrap with a drizzle of blue cheese dressing or ranch, if desired, and serve immediately.
Notes
Use butter lettuce or large romaine hearts for the best cup shape to hold the filling.
Ensure your buffalo sauce contains zero added sugar to keep the recipe strictly keto.
You can cook the chicken fresh by poaching or baking breasts, then shredding them.
