Make this restaurant-style Kani Salad at home. It is a creamy, refreshing imitation crab salad tossed in a spicy mayo dressing, perfect as a sushi side dish or light lunch.

Ingredients

Scale
  • 12 ounces imitation crab sticks (kani), shredded
  • 1 large cucumber, seeded and julienned
  • 1/4 cup Japanese mayonnaise (Kewpie preferred)
  • 1 tablespoon Sriracha (adjust for spice level)
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • Pinch of black pepper
  • Optional garnish: Tobiko (fish roe), toasted sesame seeds, or furikake

Instructions

  1. Prepare the imitation crab: Gently shred the kani sticks into thin strands. If the sticks are thick, you can lightly steam them for 2 minutes to make shredding easier, then let them cool completely.
  2. Prepare the cucumber: Cut the cucumber in half lengthwise, scoop out the seeds, and slice the remaining flesh into thin matchsticks (julienne). Pat the cucumber dry with paper towels to remove excess moisture.
  3. Make the spicy dressing: In a small bowl, whisk together the Japanese mayonnaise, Sriracha, toasted sesame oil, rice vinegar, sugar, salt, and pepper until smooth. Taste and adjust the spice or sweetness as you like.
  4. Combine the salad: In a medium bowl, gently combine the shredded kani and julienned cucumber.
  5. Dress the salad: Pour the spicy dressing over the kani and cucumber mixture. Fold everything together carefully until the ingredients are evenly coated. Avoid overmixing to keep the texture light.
  6. Chill: Cover the bowl and refrigerate the Kani Salad for at least 15 minutes to allow the flavors to meld.
  7. Serve: Before serving, transfer the salad to a serving dish. Garnish with tobiko, sesame seeds, or furikake, if using. Serve cold as a refreshing summer salad or party appetizer.

Notes

  • For the best texture, use authentic Japanese Kewpie mayonnaise; its richness makes a difference in the creamy dressing.
  • If you want a less spicy version, start with just 1/2 teaspoon of Sriracha and add more to your preference.
  • This salad works well as a light lunch when served over a bed of crisp lettuce or alongside sushi rolls.
