1.5 lbs boneless, skinless chicken breasts
1 (15 ounce) can black beans, rinsed and drained
1 (14.5 ounce) can diced tomatoes, undrained
1 (10 ounce) can Ro-Tel diced tomatoes and green chilies, undrained
4 cups chicken broth
1 cup frozen corn
1 medium onion, chopped
2 cloves garlic, minced
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
Set the Instant Pot to the Sauté function. Add the olive oil. When hot, add the chopped onion and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute more until fragrant. Press Cancel.
Add the chicken breasts, black beans, diced tomatoes, Ro-Tel, chicken broth, corn, chili powder, cumin, oregano, salt, and pepper to the Instant Pot inner liner. Do not stir excessively.
Secure the lid and set the valve to Sealing.
Select Manual or Pressure Cook (High Pressure) for 10 minutes.
When the cooking cycle finishes, allow a Natural Pressure Release (NPR) for 10 minutes, then carefully move the valve to Venting to release any remaining pressure.
Remove the chicken breasts from the pot and place them on a cutting board. Use two forks to shred the chicken.
Return the shredded chicken to the pot and stir to combine with the soup. If the soup is too thin, select the Sauté function again and let it simmer uncovered for 5 to 10 minutes until it reaches your desired consistency.
Serve hot with your choice of toppings.
Notes
For a spicier soup, add 1/4 teaspoon of cayenne pepper with the other spices.
This recipe is naturally gluten-free.
To make this recipe dairy-free, omit cheese and sour cream toppings.
If you prefer a thicker soup, you can mash about 1/4 cup of the black beans against the side of the pot before shredding the chicken.
