Follow these steps to create a refreshing, layered Iced Strawberry Matcha Latte using a homemade strawberry puree.

Ingredients

Scale
  • 1/4 cup fresh or frozen strawberries
  • 1 tablespoon granulated sugar (or to taste)
  • 1 teaspoon water
  • 1 teaspoon matcha powder (ceremonial grade recommended)
  • 2 tablespoons hot water (about 175°F)
  • 1 cup milk (dairy or non-dairy)
  • Ice cubes

Instructions

  1. Make the strawberry puree: Combine strawberries, sugar, and 1 teaspoon of water in a small blender or food processor. Blend until smooth. If you prefer a thinner syrup, heat the mixture gently on the stove until the sugar dissolves, then cool.
  2. Prepare the matcha: Sift the matcha powder into a small bowl. Add 2 tablespoons of hot water. Whisk vigorously in a ‘W’ or ‘M’ motion until the matcha is completely dissolved and slightly frothy, with no clumps remaining.
  3. Assemble the base: Place ice cubes into a tall glass. Pour the strawberry puree over the ice.
  4. Add the milk: Gently pour the milk over the puree and ice, filling the glass about three-quarters full.
  5. Layer the matcha: Slowly pour the prepared matcha mixture over the back of a spoon held just above the milk layer. This helps create a distinct layer between the strawberry base and the milk.
  6. Serve immediately.

Notes

  • For a vegan version, use oat milk or almond milk as your milk choice.
  • Adjust the sugar in the puree based on the sweetness of your strawberries.
  • If you want a sweeter matcha layer, add a small amount of simple syrup directly to the whisked matcha.
