Make these soft, chewy cookies that capture the cozy flavor of your favorite warm hot chocolate, complete with gooey marshmallows inside.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup hot chocolate mix (powdered)
  • 1 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows
  • 1/2 cup powdered sugar (for dusting/glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then mix in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, salt, and hot chocolate mix.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Fold in the chocolate chips.
  7. Scoop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Gently press a few mini marshmallows into the center of each dough ball. If you want a gooey center, try to cover them slightly with dough.
  9. Bake for 9 to 11 minutes. The edges should look set, but the centers will still look soft.
  10. Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  11. For a simple finish, you can dust the cooled cookies with powdered sugar or drizzle with a thin chocolate glaze made from melted chocolate and a touch of cream.

Notes

  • For the best hot cocoa flavor, use a high-quality hot chocolate mix.
  • If you want a fudgier cookie, slightly underbake them. They will firm up as they cool.
  • If you prefer a glaze, mix 1/2 cup powdered sugar with 1-2 teaspoons of milk or water until smooth, then drizzle over the cooled cookies.
