- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tablespoon vegetable oil
- 1/4 cup soy sauce
- 3 tablespoons honey
- 1 tablespoon rice vinegar
- 1 teaspoon grated fresh ginger
- 2 cloves garlic, minced
- 1/2 teaspoon sesame oil
- 1 cup cooked white or brown rice
- 1 cup steamed broccoli florets
- 2 green onions, sliced, for garnish
- 1 teaspoon sesame seeds, for garnish
- In a small bowl, whisk together the soy sauce, honey, rice vinegar, ginger, garlic, and sesame oil to make the sauce. Set aside.
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the chicken pieces to the hot skillet and cook until browned and cooked through, about 5 to 7 minutes.
- Pour the prepared honey soy sauce over the cooked chicken. Stir constantly and cook for 1 to 2 minutes until the sauce thickens and coats the chicken.
- To assemble the bowls, divide the cooked rice between two bowls. Top the rice with the steamed broccoli.
- Spoon the honey soy chicken mixture over the rice and broccoli.
- Garnish with sliced green onions and sesame seeds before serving immediately.
Notes
- You can substitute chicken thighs for breasts if you prefer.
- For extra flavor, add a pinch of red pepper flakes to the sauce mixture.
- Use pre-cut stir-fry vegetables to reduce prep time further.
