Make this easy, one-pan Honey Mustard Chicken Skillet with potatoes for a quick weeknight dinner. The sauce balances sweet honey and tangy mustard.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 lb small yellow or red potatoes, quartered
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup Dijon mustard
  • 3 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1/4 cup chicken broth
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the potatoes and cook for 8 to 10 minutes, stirring occasionally, until they start to brown.
  3. Push the potatoes to one side of the skillet. Add the seasoned chicken to the empty side and cook for 5 minutes, turning once, until lightly browned on all sides.
  4. In a small bowl, whisk together the Dijon mustard, honey, apple cider vinegar, and garlic powder to make the sauce.
  5. Pour the honey mustard sauce over the chicken and potatoes in the skillet. Stir gently to coat everything.
  6. Add the chicken broth to the skillet. Bring the mixture to a simmer, then reduce the heat to medium-low.
  7. Cover the skillet and cook for 8 to 10 minutes, or until the chicken is cooked through (internal temperature reaches 165°F) and the potatoes are tender.
  8. Remove the lid and cook for 1 to 2 minutes more if the sauce needs to thicken slightly.
  9. Garnish with fresh parsley before serving.

Notes

  • Use small potatoes like Yukon Gold or red potatoes; they cook faster than large Russets.
  • For crispier potatoes, cook them for an extra 5 minutes before adding the chicken.
  • If you prefer a thicker sauce, remove the chicken and potatoes after step 6, then simmer the sauce alone until reduced by about one-third before returning the solids to the pan.
