Prepare a satisfying chicken bowl featuring sweet and tangy honey mustard chicken, served over a base with a rich, creamy sauce.

Ingredients

Scale
  • 1.5 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup honey
  • 3 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 cup cooked white or brown rice (for base)
  • 1 cup steamed broccoli florets (for topping)
  • 1/2 cup shredded carrots (for topping)
  • For the Creamy Sauce:
  • 1/2 cup Greek yogurt (plain, full fat recommended)
  • 2 tablespoons mayonnaise
  • 1 tablespoon whole grain mustard
  • 1 teaspoon lemon juice
  • 1/4 teaspoon garlic powder

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 6-8 minutes.
  3. In a small bowl, whisk together the honey, Dijon mustard, and apple cider vinegar to create the glaze.
  4. Pour the honey mustard glaze over the cooked chicken in the skillet. Stir constantly until the sauce thickens slightly and coats the chicken, about 1 minute. Remove the skillet from the heat.
  5. Prepare the Creamy Sauce: In a separate small bowl, combine the Greek yogurt, mayonnaise, whole grain mustard, lemon juice, and garlic powder. Whisk until completely smooth.
  6. Assemble the bowls: Divide the cooked rice among serving bowls. Top the rice with the honey mustard chicken, steamed broccoli, and shredded carrots.
  7. Drizzle a generous amount of the creamy sauce over the chicken and vegetables before serving.

Notes

  • You can substitute quinoa or mixed greens for the rice base if you prefer.
  • For meal prepping, store the chicken, sauce, and base ingredients separately and assemble just before eating.
  • If the sauce is too thick, add a teaspoon of water or milk to reach your desired consistency.
